Happy Easter!! I hope you are having a wonderful day!! This royal Easter looks a bit different without William and Kate. Out of the spotlight and relaxing with family, I’ve wondered how they would spend today. If Kate’s feeling up to it, I think they had a very Middleton Easter with Kate’s side of the family.
In Pippa’s book, Celebrate, she shared some Easter traditions from the Middleton family. One particular sentence that stood out to me, because of Kate’s recent video message, is about daffodils, one of my favorite spring flowers. “Easter brings feelings of excitement and renewal, like the sighting of the first yellow daffodils, which provide a sense of hope and a burst of brightness,” Pippa wrote. How fitting for this particular Easter Sunday.

Like so many, “a huge Easter egg hunt” is also a Middleton family tradition. Pippa shared this in Celebrate about their family egg hunt…
We would look forward to a huge Easter egg hunt, which was (and still is) quite competitive in our household, and then have a family lunch, often with roast spring lamb, but always with plenty of chocolate before and after!
This year was probably an extra lively hunt with so many little ones!! George, leading the pack, as the oldest. But, everyone knows who’s really in charge, and that’s Charlotte. Then Louis, Arthur, Grace, and Rose, Pippa’s children. And baby Inigo, watching it all intently, plotting his moves for next year. And since it’s the Middletons, I can imagine there’s a dog or two, doing the hunt with the kids.

One Middleton tradition that did surprise me, how they dye their eggs the day before Easter by cracking the shells. I’m not familiar with this method, Pippa explained the process like this…
As children, the day before Easter we would make marbled eggs by hard-boiling them, cracking the shells and leaving them in water colored with food dye, which would seep through the cracks. It was always fun eating our creations the next morning for breakfast.

Pippa includes a stuffed roast lamb recipe in her cookbook. Although, she does not describe it as their family recipe, she does note several times that roasted spring lamb is their traditional Easter lunch. I think it’s safe to assume this is the Middleton family recipe. I don’t eat lamb, but I wanted to share the recipe. The stuffing and the sauce look excellent from the recipe and I am going to make both, but use chicken. Stuffed chicken breast with apricot dressing and red currant sauce. It would also be good as a stuffed pork tenderloin.

However Kate spent today, I hope it was relaxing, joyous, and refreshing, everything she needs right now. Celebrate by Pippa Middleton is no longer in print, but you can find used copies, in like new condition, on Amazon. Happy Easter!! Happy Easter! Pippa’s Celebrate was honestly so underrated. I got it used from Thriftbooks and got a big kick out of the recipes and stories. It’s a really cute book and the Middletons are really tight knit like ride or dies for each other. I’m sure the fam w all the children had a great Easter with the addition of Inigo.
